SW recipe: Pork & mushroom stroganoff

Ready in about 35 minutes


300g chestnut mushrooms

16 shallots, peeled

Low calorie cooking spray

300g dried tagliatelle

350g lean pork tenderloin fillet, visible fat removed, thinly sliced

2 tsp sweet smoked paprika

2 tsp pink peppercorns, lightly crushed, plus whole peppercorns to serve

300ml chicken stock

75g baby gherkins, drained and roughly chopped

150g fat-free natural fromage frais

1 tsp lemon juice

3 tbsp snipped fresh chives


1 Put half the chestnut mushrooms in a food processor and whizz until finely chopped. Halve the remaining mushrooms and finely chop half the shallots.

2 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Stir-fry all the mushrooms and shallots for 6-8 minutes, or until softened.

3 Cook the tagliatelle according to the pack instructions, then drain. Meanwhile, add the pork. paprika and crushed peppercorns to the frying pan and stir-fry over a high heat for 3.4 minutes, or until the pork is starting to brown. Pour in the stock. bring to the boil. then reduce the heat and simmer gently for &8 minutes. stirring occasionally.

4 Remove the frying pan from the heat and stir in the gherkins, fromage frais and lemon juice. Scatter over the chives and whole peppercorns. Divide the tagliatelle and stroganoff between 4 plates Or bowls to serve.
