SW recipe: Pork steak with herby fries and balsamic salad

Serves 4
Ready in 40 minutes


1kg floury potatoes, such as Maris Piper or King Edward, cut into fries

Low-calorie cooking spray

4 lean pork medallions, visible fat removed

2 garlic cloves, crushed

25g fresh flat-leaf parsley, leaves roughly chopped

2 courgettes, peeled into ribbons with a veg peeler

300g tomatoes, sliced

1 tbsp balsamic vinegar


1 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the fries for 2-3 minutes, then drain. Spread on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and cook for 20-25 minutes, turning halfway, or until golden.

2 Meanwhile, if the pork medallions are thicker than 1cm, sandwich between cling film and gently bash with a rolling pin until they’re 1cm thick. Preheat a large, non-stick frying pan over a medium-high heat. Spray the pork with low-calorie cooking spray and cook for 3 minutes on each side, or until cooked through. Transfer to a plate, loosely cover with foil and leave to rest.

3 Mix together the garlic and parsley in a large bowl, then tip in the fries and toss to coat. Toss the courgettes and tomatoes in the balsamic. Divide the pork medallions between 4 plates and serve with the fries and salad topped with freshly ground black pepper.
