SW recipe: Pork steaks with foil-baked jackets and herb salsa

Ingredients

4 baking potatoes, pricked with a fork

Low-calorie cooking spray

2 shallots, finely chopped

2 garlic cloves, crushed

2 tbsp red wine vinegar

1 tsp dried oregano

1 red chilli, finely chopped (optional)

25g fresh coriander, chopped, reserving some to serve

25g fresh flat-leaf parsley, chopped

8 pork loin steaks, visible fat removed

Fat-free natural yogurt, to serve

Green leaf, cucumber and green pepper salad, to serve

Method

1 Preheat your barbecue until the coals are white-hot, or preheat your oven to 200°C/fan 180°C/gas 6. Spritz the potatoes with low-calorie cooking spray and wrap each in a double layer of foil. If you’re cooking the potatoes on the barbecue, bake directly on the coals for 20 minutes. Turn and cook for a further 20 minutes, or until soft. If cooking in the oven, place on a non-stick baking tray and bake for 40 minutes, then discard the foil and bake for a further 20 minutes.

2 To make the herb salsa, tip the shallots and garlic into a bowl, and season. Add the vinegar, then stir through the oregano, chilli (if using), coriander and parsley. Set aside.

3 Season the pork steaks and spray with low-calorie cooking spray. Barbecue over the hot coals, or cook under a grill preheated to high for 5-6 minutes on each side, or until cooked through.

4 Split the potatoes and top with the yogurt, a twist of black pepper and the reserved coriander. Serve with the pork steaks topped with the herb salsa and the green salad.
