SW recipe: Potato, leek and tomato boulangere

Ingredients:

800g floury potatoes, such as Maris Piper or King Edward, peeled and sliced
Low-calorie cooking spray
1 large onion, thinly sliced
2 large leeks, thinly sliced
4 garlic cloves, finely chopped
8 plum tomatoes, thickly sliced
150ml vegetable stock
3 tbsp chopped fresh thyme leaves, plus extra sprigs to garnish
120g Cheddar or Gruyère, grated

Method:

Preheat your oven to 200°C/fan 180°C/gas 6. Boil the potatoes for 5-6 minutes, until soft but not falling apart, then drain and set aside.
Meanwhile, spray a frying pan with low-calorie cooking spray and place over a medium heat. Add the onion, leeks and garlic, season and cook for 5-10 minutes, or until softened.
Arrange half the potatoes in the base of a 20cm x 30cm ovenproof dish and season. Follow with half the tomatoes, then spread the leek mixture over the top. Finish with the remaining tomatoes and potatoes.
Pour over the stock, sprinkle over the chopped thyme and season again with black pepper. Scatter over the cheese and bake for 30 minutes, or until golden and bubbling. Garnish with the thyme sprigs and divide between 4 plates to serve.
