- Low-calorie cooking spray
- 2 garlic cloves, crushed
- ½-1 tsp dried chilli flakes, to taste
- ½ tsp fennel seeds, crushed
- 400g can chopped tomatoes
- 1 litre boiling vegetable stock
- A pared piece of unwaxed lemon peel, plus wedges to serve
- 400g dried orzo pasta
- 400g peeled raw tiger prawns, defrosted if frozen
- A small bag of baby spinach
- 4 spring onions, finely sliced
1 Spray a wide non-stick frying pan with low-calorie cooking spray and place over a medium heat.
2 Add the garlic, chilli flakes and fennel seeds and cook for 1 minute or until aromatic, stirring often. Add the chopped tomatoes, stock and lemon peel and bring to the boil. Add the orzo, reduce the heat to low and simmer gently for 8 minutes, stirring occasionally.
3 Stir in the prawns and cook for 3-5 minutes or until the prawns are cooked and the orzo is tender. Stir through the spinach until it has wilted and add salt and pepper to taste.
4 Remove the lemon peel and divide the risotto between shallow bowls. Scatter over the spring onions and serve with lemon wedges to squeeze over.
