5 spring onions, roughly chopped
1 garlic clove, peeled
2cm piece fresh root ginger, peeled and roughly chopped
3 tbsp reduced-salt soy sauce
2 tbsp oyster sauce
½ tsp Chinese five-spice powder
½ tsp mild curry powder
250g dried medium egg noodles
Low-calorie cooking spray
600g ready-prepared stir-fry vegetables
300g small raw peeled prawns
1 Put the onions, garlic, ginger, soy and oyster sauces and spices into a food processor with 3-4 tbsp water. Whizz into a paste, then transfer to a microwave-safe container, cover and microwave for 1 minute on high. Cook the noodles according to the pack instructions. Drain and rinse under warm water for 1 minute.
2 Spray a large, non-stick frying pan or wok with low-calorie cooking spray and place over a medium-high heat. Stir-fry the vegetables for 2-3 minutes. Add the paste and cook for 2 minutes, or until the veg are soft. Add the noodles and prawns and cook for 2-3 minutes, or until the prawns are pink and cooked through, adding a splash of water if needed. Divide between 4 bowls to serve.
