SW recipe: Quick and easy side dishes

Radish kachumba

Serves 4 Ready in about 15 minutes

Roughly dice 200g radishes½ cucumber4 spring onions and 250g tomatoes. Mix with the juice of 2 limes1 tbsp red wine vinegar and 2 heaped tsp black onion (nigella) seeds. Just before serving, stir through 2 tbsp chopped fresh mint leaves.

Bombay potatoes

Serves 4 Ready in about 45 minutes

Preheat your oven to 200°C/fan 180°C/gas 6. Halve 750g Charlotte potatoes and spread on a large, non-stick baking tray. Mix 1 tbsp medium curry powder with ½ tsp salt½ tsp freshly ground black pepper1 tsp turmeric½-1 tsp dried red chilli flakes and 2 tbsp lemon juice. Dot this mixture over the potatoes, then toss to coat. Spray with low-calorie cooking spray and roast for 35 minutes, stirring halfway, until crisp and golden.

Vegetable pilau rice

Serves 4 Ready in about 45 minutes

Dice 1 onion1 celery stick and 2 peeled carrots. Spray a large, non-stick, lidded saucepan with low-calorie cooking spray and place over a medium heat. Add the veg and a splash of water and cook until softened. Add 1 tbsp Bart Blends Pilau or Schwartz Pilau Rice seasoning and 200g dried basmati rice, and stir well. Pour in 400ml vegetable stock and bring to the boil. Reduce the heat, cover and cook for 15 minutes, or until the rice is tender. Remove from the heat, stir in 100g frozen peas, cover and leave to stand for 5 minutes.
