500g dried penne or other pasta shapes
12 back bacon rashers, visible fat removed, roughly chopped
2 garlic cloves, halved
Low-calorie cooking spray
1 large onion, finely chopped
250g pack sliced white mushrooms
Small handful of fresh chives, roughly chopped
Salad leaves, to serve
Cook the pasta according to the pack instructions, then drain and set aside.
Meanwhile, heat a large non-stick frying pan over a high heat and add the bacon and garlic. Stir-fry for 5 minutes, or until the bacon is crisp. Discard the garlic and set the bacon aside, keeping it warm.
Spray the pan with low-calorie cooking spray. Fry the onion gently for 5 minutes, add the mushrooms and cook for another 5 minutes or until softened.
Crack the eggs into a bowl, season lightly and whisk well. Add the cooked pasta and bacon to the mushrooms and onions, remove the pan from the heat and stir in the beaten eggs. Toss thoroughly so that the eggs thicken to make a sauce that coats the pasta.
Scatter over the chives and serve with the salad leaves.
