SW recipe: Rainbow frittata

Ingredients:

low calorie cooking spray
1 chopped pepper
sliced courgette
baby spinach
6 eggs
cherry tomatoes

Method:

Preheat your oven to 200c / fan 180c /gas 5.
Spray a non stick oven proof frying pan with low-calorie cooking spray and place over a medium high heat.
Add chopped pepper and courgette and fry for 1 minute. cover and reduce the heat and cook for 5 more minutes stirring occasionally.
Add the spinach and cook until wilted.
Remove all the veggies from the pan and set aside.
Spray the pan with low calorie cooking spray and return to a high heat. Once hot, pour in the beaten eggs. Spoon in the cooked vegetables and cherry tomato halves.
Cook for a couple of minutes then transfer to the oven and cook for a further 10 minutes, until the egg is cooked through.
Season and serve with salad and Slimming World chips.
