2 medium egg whites, preferably from older eggs (see Cook’s note)

75g caster sugar

80g fat-free natural Greek yogurt

1 tsp vanilla extract

16 fresh raspberries, plus extra to serve

1 Preheat your oven to 180°C/fan 160°C/gas 4. Line a large baking tray with baking paper. In a large, clean glass bowl, beat the egg whites with an electric hand whisk on a medium speed until they form stiff peaks. Increase the speed to high and add the sugar a tablespoon at a time, whisking for a few seconds between each addition to bring the meringue back to stiff peaks.

2 Fit a piping bag with a large serrated nozzle and spoon in the meringue. Pipe 8 x 8cm-diameter nest bases onto the lined tray, starting in the centre of each and circling out like a snail shell. Pipe a layer of meringue on top of the outer edge of each base to make the nest wall. Put the meringues in the oven and immediately reduce the heat to 140°C/fan 120°C/gas 1.

3 Bake for 1 hour, or until crisp and the nests lift easily from the baking paper. Set aside on the tray to cool completely. Mix together the yogurt and vanilla extract, and use to fill each nest. Top each with 2 raspberries and a chocolate egg, and serve with the extra raspberries.

Meringues are better made using eggs that are 2-3 days away from their best-before date. They have runnier egg whites, making them easier to beat and create more volume.
