SW recipe: Ratatouille lentil salad with halloumi

Ingredients:

360g dried puy lentils
2 garlic cloves, finely crushed or grated
150ml red wine vinegar
Juice of 2 lemons
3 aubergines, sliced lengthways
3 courgettes, sliced lengthways
Low-calorie cooking spray
3 large ripe vine tomatoes, sliced
2 red onions, sliced into rounds
1 small pack fresh basil leaves, roughly chopped
270g reduced-fat halloumi, cut into 12 slices

Method:

Cook the lentils according to the pack instructions, then drain and leave to cool in a large bowl. Meanwhile, mix together the garlic, vinegar and lemon juice to make a dressing and set aside.
Heat your barbecue until the coals are white-hot or place a large non-stick griddle pan over a high heat. Spray the aubergine and courgette slices with low-calorie cooking spray and cook for a few minutes on each side, in batches if necessary, or until charred and tender. Add the cooked vegetables to the bowl of lentils with the tomatoes, onions and half the basil. Pour over the dressing, season lightly and toss together.
Spray the halloumi slices with low-calorie cooking spray, then place on the barbecue or griddle pan. Cook on just one side until they’re soft on top and charred. Divide the halloumi and lentil mixture between 6 plates, serving 2 slices of halloumi per person, and scatter over the remaining basil to serve.
