Ratatouille-stuffed giant pasta shells

Serves 4 Syns per serving 6 Deduct 6 Syns if using the mozzarella as a Healthy Extra Ready in 2 hours


16 dried giant pasta shells

160g ready-grated mozzarella

Fresh basil leaves, to serve

For the roasted veg:

2 red onions, each sliced into 6 wedges

4 garlic doves, peeled

3 red peppers, deseeded and each cut into 6 slices

3 courgettes, sliced diagonally into 2cm pieces

250g mushrooms, halved

6 large tomatoes, quartered

2 sprigs of fresh rosemary

Low-calorie cooking spray

For the tomato sauce:

1 red onion, finely chopped

3 garlic cloves, crushed

1 level tbsp mushroom ketchup (optional)

1kg passata


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread all the roasting veg on 1 or 2 non-stick baking trays in a single layer. Add the rosemary, spray with low-calorie cooking spray and season. Roast for 50 minutes, then leave to cool until needed.

2 While the veg are cooling, cook the pasta for 3 minutes less than the pack instructions. Drain, run under cold water to cool completely, then set aside in a sieve.

For the sauce, spray a medium saucepan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic with a splash of water, and cook gently for 5-10 minutes, stirring frequently. Add the mushroom ketchup (if using) and passata, and simmer for 10 minutes over a low heat. Season to taste.

3 Fill the shells with the cooled veg, then stir the leftover veg into the sauce with half the mozzarella. Pour the sauce into a 2-litre ovenproof dish, then arrange the shells on top in 2 circles. Scatter over the remaining mozzarella and bake for 25-30 minutes.

Scatter the basil over the bake, then divide between 4 plates, discarding the rosemary before eating.
