SW recipe: Ratatouille with couscous

Ingredients:

Low-calorie cooking spray
2 onions, roughly chopped
1 aubergine, roughly chopped
2 large courgettes, roughly chopped
1 red and 1 yellow pepper, deseeded and roughly chopped
4 garlic cloves, finely chopped
400g can chopped tomatoes
400g passata with onions and garlic
2 tbsp balsamic vinegar
¼ tsp sweetener
Salt and freshly ground black pepper
12 pitted black olives in brine, roughly chopped
A small handful of fresh basil, to garnish
250g dried couscous, cooked according to packet instructions, to serve

Method:

Place a large pan sprayed with low-calorie cooking spray over a high heat. Add the onions, aubergine, courgettes, peppers and garlic and stir-fry for 2-3 minutes.
Add the tomatoes, passata, vinegar and sweetener, season and stir. Cover tightly, turn the heat down to low and simmer for 15 minutes.
Remove the ratatouille from the heat. Divide between plates and scatter over the olives and basil. Add a twist of black pepper and serve with the couscous.
