Serves 4 Ready in about 45 minutes, plus chilling


400g rhubarb, trimmed and cut into short chunks

2 tbsp sweetener

2 tsp ground ginger

Finely grated zest and juice of 1 orange

2 drops pink food colouring

150g fat-free natural fromage frais

400g can ready-made low-fat custard


1 Preheat your oven to 180°C/fan 160°C/gas 4. Put the rhubarb in a large, shallow ovenproof dish in a single layer. Sprinkle over the sweetener, ginger, orange zest and juice and food colouring, and stir well. Cover with foil and bake for 25-30 minutes, or until tender. Allow to cool completely, then chill for 2-3 hours.

2 Put the homage frais and half the chilled rhubarb mixture in a bowl and mix well. Divide between 4 dessert glasses, then top each with a quarter of the custard. Divide over the remaining rhubarb and serve.
