SW recipe: Rhubarb and gin jellies

EVERYDAY EASY
Serves 4 Ready in about 30 minutes, plus chilling

Ingredients:

200g rhubarb, chopped into 1cm lengths

2 level tbsp sweetener

Finely grated zest of 1 orange, plus extra to decorate

5 sheets leaf gelatine

200ml Cawston Press Apple & Rhubarb Cloudy Juice

25ml gin

Few drops of pink food colouring

4 tbsp fat-free natural fromage frais

Method:

1 Mix the rhubarb, sweetener, orange zest and 2 tbsp water in a small saucepan. Cover and cook gently over a low heat for 12-15 minutes, very carefully stirring it around halfway through – you want the rhubarb to be soft, but still keep its shape. Meanwhile, soak the gelatine in cold water for 10-12 minutes, or until softened.

2 Carefully drain the rhubarb using a sieve, collecting the syrup in a measuring jug. Add the apple and rhubarb juice, and the gin to the jug, stirring well. Divide the rhubarb between 4 dessert glasses.

3 Squeeze the excess water from the gelatine and put the gelatine in a small saucepan with a splash of the reserved rhubarb mixture. Heat very gently, stirring constantly, until the gelatine has dissolved. Stir the mixture back into the measuring jug. Add enough cold water to make up to 500ml and a few drops of pink food colouring.

4 Divide the jelly between the glasses. Chill for 3-4 hours, or until set.

Top each with 1 tbsp fromage frais and a little orange zest to serve.
