SW recipe: Rigatoni with sausage and fennel

Serves 4 (sauce only) Ready in about 40 minutes

Ingredients:

Low-calorie cooking spray

8 Sainsbury’s Be Good To Yourself British Cumberland Pork Sausages, skins removed and discarded

1 onion, finely chopped

1 red pepper, deseeded and cut into small chunks

200g button mushrooms, sliced (optional)

2 garlic cloves, finely chopped

3 tsp fennel seeds

1 tsp dried red chilli flakes

400g can chopped tomatoes

4 tbsp tomato puree

300ml hot chicken or vegetable stock

Salt and freshly ground black pepper

400g dried rigatoni pasta

A small pack of fresh Greek basil, leaves picked

30g pecorino, finely grated

Method:

1 Spray a frying pan with low-calorie cooking spray and place over a medium heat. Cook the sausage meat until golden. stirring and breaking it up with a wooden spoon. Remove from the pan and set aside.

2 Turn the heat down to low and gently fry the onion and pepper for 5 minutes. or until beginning to soften. Stir in the mushrooms, garlic, fennel seeds and chilli flakes and cook for a further minute.

3 Add the tomatoes, tomato puree and stock, then season and simmer for 15.20 minutes, or until thickened.

4 Meanwhile, cook the pasta according to the packet instructions, then drain. Toss with the sausage meat and sauce and stir in the basil. Divide between 4 dishes, scatter a quarter of the pecorino over each and serve.
