1.2kg lean beef topside, visible fat removed
800g floury potatoes, such as Maris Piper or King Edward, peeled and chopped into chunks
500g carrots, peeled and chopped into thick batons
Low-calorie cooking spray
1 red onion, finely chopped
500g mushrooms, sliced
2 garlic cloves, crushed
2 level tbsp cornflour
3 large egg yolks
400ml skimmed milk
10g fresh tarragon, finely chopped
½ pointed spring cabbage, core removed, shredded
1 Preheat your oven to 220°C/fan 200°C/gas 7. Put the beef in a non-stick roasting tin, and spread the potatoes and carrots on a non-stick baking tray in a single layer. Spray the beef and the veg with low-calorie cooking spray. Season and cook (beef above the veg) for 20 minutes. Reduce the heat to 200°C/fan 180°C/gas 6 and cook for a further 45-50 minutes for medium well-done beef. Turn the veg halfway through cooking.
2 Meanwhile, spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the onion, mushrooms and garlic for 8-10 minutes, stirring often, until softened and coloured. Set aside. Put the cornflour and egg yolks in a non-stick saucepan and whisk until smooth. Gradually whisk in the milk. Place over a medium-high heat and bring to steaming, whisking all the time. Cook for 4-5 minutes until you feel the sauce thicken, stirring continuously. Once it’s a white-sauce consistency, add the mushroom mixture and tarragon, and check the seasoning. Cover and set aside.
3 Once the beef is ready, remove from the oven and rest for 10 minutes, lightly covered with foil. Keep cooking the veg, or reduce the heat to low to keep warm if ready. Boil the cabbage for 2-3 minutes, then drain. Gently reheat the sauce, adding a splash of hot water if it’s too thick. Slice the beef and divide between 4 plates. Serve with the veg, a quarter of the sauce per person and a twist of black pepper.
