SW recipe: Roast beef with potatoes, carrots & broccoli gratin

Ready In 1 hour 40 minutes


1 kg floury potatoes, such as Marls Piper or King Edward, peeled and cut into large chunks


1.25kg beef topside joint, visible fat removed

300ml beef stock

1/2 tsp mustard powder

600g carrots. peeled and cut into batons

For the broccoli gratin:

5oog thin-stemmed broccoli

2 level tbsp cornflour

150ml skimmed milk

200g plain quark

1/4 tsp grated nutmeg

25g fresh Parmesan, finely grated


1 Preheat your oven to 220°C/fan 200’C/gas 7. Spread the potatoes on a non-stick baking tray in a single layer, spray with Frylight, season and roast for 20 minutes.

2 Reduce the heat to 190°C/fan 170°C/ gas 5. Season the beef and place in a small roasting tin. Put in the oven above the potatoes and cook for 55 minutes for medium rare or 1 hour 5 minutes for medium-well done.

3 Meanwhile, for the gratin, boil the broccoli for 3-4 minutes, or until just tender Drain well, then spread over the base of a shallow ovenproof dish. Mix the cornflour with a little milk in a small saucepan, then stir in the rest of the milk Plate over a medium-high heat, whisking continuously, until smooth and thick. Remove from the heat, and stir in the quark and nutmeg, Pour the sauce over the broccoli and evenly sprinkle over the Parmesan. Set aside.

4 Remove the beef from the oven and transfer to a carving board. Wrap in foil and leave to rest (or 10 minutes. Turn off the oven. Cover the potatoes loosely with foil and transfer to the bottom of the oven to keep warm.

5 Preheat your grill to high. For the gravy, put the stock and mustard powder in a saucepan. Bring to the boil, then simmer for 10 minutes. Meanwhile. boil the carrots for 5 minutes, or until tender. then cover and keep warm. Cook the broccoli gratin under the grill for 3-4 minutes until golden and bubbling

6 Divide everything between 4 plates, and season with a twist of black pepper. Serve with a quarter of the gravy per person.
