- Preheat oven to 220°C (200°C Fan). Put potatoes into a saucepan of cold, salted water, bring to boil over high heat and cook for about 7 minutes until almost fully cooked but still a bit hard in the middle. Drain well and leave them in the colander for a few minutes until the steam has died down.
- Meanwhile, use non-stick baking paper to line a roasting tin that will take all the potatoes in one layer, with a little room to spare around each one. You don’t want the pan to be overcrowded or your roasties won’t get the chance to crisp up properly. Spray the baking paper with a little low-calorie cooking spray.
- Dry the saucepan and pop the potatoes back in, then cover with a lid and give them a gentle shake to rough up the edges – this is what makes them nice and crunchy! Spoon the potatoes into the roasting tin and spray each one with a little more low-calorie cooking spray. Roast on the top shelf of the oven for about 45 minutes or until done to your liking. Sprinkle over the celery salt to serve.
