1 onion, chopped
1 red pepper
Broccoli (I used about 6 florets, could poss have done with more)
1 tin chickpeas
1 medium carrot
Cut up your broccoli, spray with frylight and roast for about 12/15mins til it starts to go crisp.
Fry off onions til soft and a bit caramelised. Blitz chickpeas in a food processor until they’re mostly blended, but not totally smooth. Add broccoli to onions/carrot and cook for a few minutes. Add chickpeas and heat through. Add breadcrumbs and cook for a couple of mins.
Leave to cool down for a few mins and then shape into burgers.
Leave them to settle a bit and then cook in the oven for a 5-10 mins until cooked!
