2 large cauliflowers, broken into large florets
Low-calorie cooking spray
300g (101/2 oz) cherry tomatoes
250g (9oz) plain quark
1 medium egg, beaten
1 level tsp Dijon mustard
75g (3oz) reduced-fat Cheddar cheese, grated
Chopped fresh chives, to serve
Salad, to serve
1. Preheat the oven to 200°C/400°F/Gas Mark 6. Put the cauliflower florets in a large, non-stick baking tray. Spray with low-calorie cooking spray, season lightly and toss well. Roast for 35-40 mins or until almost tender and nicely tinged with brown.
2. Remove the tray from the oven, turn the florets and scatter over the cherry tomatoes. Return to the oven and roast for a further 10 mi or until the tomatoes and cauliflower are tender.
3. Preheat the grill to high. Mix the quark with the egg, mustard, half of the cheese and a little seasoning.
4. Pour the mixture evenly over the cauliflower and tomatoes and spread out to cover. Scatter over the rest of the cheese and grill for 2-3 mins or until the sauce has heated through and the cheese is melted and golden. Scatter over the chives and serve with salad.
