SW recipe: Roasted Vegetable Quiche

Ingredients:

6 Large eggs
200g Fat Free Cottage Cheese
1 Yellow Bell Pepper
1 Large Courgette
150g Cherry Tomatoes
1 Large Red Onion
To taste Salt & Pepper

Method:

Chop all vegetables, place on a lined oven tray, spray with Fry-light and roast for 30 mins at 180 fan, turning occasionally.

Mix the cottage cheese and eggs and pour into a flan dish.

Place the roasted vegetables on top of the mixture, pushing and many into the mixture as possible.

Place in the oven for 30-40 minutes on 180 fan then serve.
