SW recipe: Rocket, watercress & spinach pesto pasta

Serves 4
Ready in 40 minutes


500g cherry tomatoes

350g dried orecchiette pasta, or small dried pasta shells

120g bag rocket, watercress and spinach salad

25g fresh basil, leaves roughly chopped

1 garlic clove, chopped

1 small red chilli, deseeded and chopped

150g fat-free natural fromage frais

1 tsp red wine vinegar


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the tomatoes in a shallow, non-stick roasting tin. Season and roast for 25-30 minutes until softened.

2 Meanwhile, cook the pasta according to the pack instructions. Put the rocket, watercress and spinach salad in a food processor with the basil, garlic and chilli. Pulse until finely chopped. Add the fromage frais and vinegar, season, then pulse until you have a pesto-like consistency.

3 Drain the pasta, then stir through the pesto. Divide between 4 bowls. Top with the cherry tomatoes and a twist of black pepper to serve.

And so you never feel deprived you can enjoy limited amounts of treats which are higher-calorie, less filling foods that include chocolate, crisps and alcohol.
