SW recipe: Rustic minestrone with bacon


  • Low-calorie cooking spray
  • 2 carrots, peeled, cut into 2cm cubes
  • 2 celery stalks, cut into 2cm chunks
  • 1 onion, roughly chopped
  • 12 rashers of back bacon, all visible fat removed, cut into bite-size strips
  • 2 garlic cloves, finely chopped
  • 1 tsp chopped fresh rosemary
  • 1 tsp dried thyme
  • 3 tbsp tomato purée
  • 400g can chopped tomatoes
  • 1.2 litres chicken stock
  • 400g can cannellini beans, drained
  • 50g dried angel hair pasta, broken into short lengths
  • 100g kale, thickly shredded
  • Salt and freshly ground black pepper


  1. Spray a flameproof heavy-based casserole dish with low-calorie cooking spray and place over a low heat. Add the carrots, celery, onion and bacon and stir-fry for 1-2 minutes. Stir in the garlic, herbs and tomato purée and cook for 1 minute. Add the tomatoes and most of the stock, stir and bring to the boil.
  2. Cover, reduce the heat to very low and cook for 45-50 minutes, stirring occasionally.
  3. Stir in the beans and pasta, adding the rest of the stock if the soup seems too thick. Scatter the kale over the top and cover. Cook for 15-20 minutes, or until the pasta is tender. Season and serve in warmed bowls.
