SW recipe: Sausage and chicken stew with butterbean mash

Ingredients

2 large red onions, sliced

3 garlic cloves, crushed

400g can chopped tomatoes

½ tsp ground cumin

½ tsp ground cinnamon

½ tsp sweet smoked paprika

600g skinless and boneless chicken thighs, visible fat removed, halved

3 yellow peppers, deseeded and roughly chopped

3 tbsp tomato purée

200ml chicken stock

6 frozen Slimming World Syn-free Pork Sausages

80g baby spinach

Roughly chopped fresh coriander leaves, to serve
For the butterbean mash:

800g swede, peeled and chopped

400g can butterbeans, drained

100ml vegetable stock

Method

1 Preheat your oven to 160°C/fan 140°C/gas 3. Place the onions, garlic, tomatoes, spices, chicken and peppers in a casserole dish. Stir in the tomato purée and chicken stock, and season. Cover and bake for 1 hour 30 minutes.

2 Meanwhile, make the mash by boiling the swede in a large saucepan for 25 minutes, or until very soft. Drain, then return to the pan and add the butterbeans and vegetable stock. Season and roughly mash. Cook the sausages according to the pack instructions, then halve diagonally.

3 Stir the spinach and sausages into the stew and return to the oven for 12-15 minutes. Divide the stew and butterbean mash between 4 plates. Top with the coriander and some freshly ground black pepper, and serve.

COOK’S NOTE
If you’re not having an SP day, you can swap the swede for sweet potatoes. Microwave 3 peeled sweet potatoes for 8-10 minutes until completely softened, then mash with the stock and butterbeans.

And so you never feel deprived you can enjoy limited amounts of treats which are higher-calorie, less filling foods that include chocolate, crisps and alcohol.
