SW recipe: Sausage and vegetables traybake

Ingredients:

⭐️800g Floury potatoes such as Maris Pipers, cut into chunks
⭐️4 large parsnips, cut into chunks
⭐️6 large carrots, cut into chunks
⭐️2 small fresh Rosemary sprigs, leaves finely chopped
⭐️2 garlic cloves, finely chopped
⭐️low calorie cooking spray
⭐️12 back bacon rashers or medallions, visible fat removed
⭐️8 Slimming World Pork sausages, defrosted and each cut into 3 pieces
⭐️500g Brussel Sprouts
⭐️4 level tsp chicken gravy granules
⭐️1 chicken stock pot
⭐️4 level tsp cranberry sauce, to serve

Method:

⭐️Preheat your oven to 220 deg/fan 200deg/gas 7

⭐️Cook the potatoes and parsnips in a large pan of boiling water on
a high heat for 5 mins, then drain well

⭐️Put the potatoes, parsnips, carrots, rosemary and garlic in a large
non-stick roasting tin or deep baking tray (or two small ones) and season lightly. Spray with low-calorie spray, toss well and roast for 25 mins.

⭐️Meanwhile, stretch each piece of bacon with the back of a knife and
halve lengthways. Wrap 1 strip of bacon round each sausage chunk
and hold in place with a cocktail stick.

⭐️Remove the tin from the oven and turn all the veg, Scatter the bacon
wrapped sausages and sprouts on top, spray with low-calorie cooking spray
and roast for another 30-35 mins or until the vegetables are tender and
the sausages are cooked.

⭐️Just before it’s all ready, put the gravy granules and stock pot in a heatproof
jug. Add 1 level tsp cranberry sauce, 280ml boiling water and whisk well.

⭐️Discard all the cocktail sticks and pour over the gravy. Divide between plates and serve hot with the rest of the cranberry sauce.

⭐️If you cant get a hold of Slimming World sausages, use other low- fat sausages
and count the syns.
