SW recipe: Sausage, roast pepper & chickpea stew

Ingredients:

Serves 4 Ready in about 50 minutes, plus defrosting

2 large red peppers

2 large yellow peppers

Low-calorie cooking spray

2 large onions, halved and thinly sliced

1/4 tsp dried red chilli flakes, to taste

12 frozen Slimming World Syn-free Chorizo-style Sausages or Slimming World Syn-free Pork Sausages, defrosted

3 large garlic cloves, thinly sliced

250g passata

1 tsp dried Bart Mediterranean spice mix or dried mixed herbs

400g can chickpeas, drained and rinsed

1 tbsp balsamic vinegar

Small pack fresh basil leaves, chopped, reserving some whole leaves to serve

200g mangetout, to serve

Method:

1 Preheat your grill to high. Grill the whole peppers for 20 minutes, or until the skins are black and blistered, turning every 5 minutes.

2 Meanwhile, spray a large, non-stick, lidded frying pan with low•calorie cooking spray and place over a low heat. Add the  onions, chilli flakes and a splash of water. Cover and cook for 10 minutes. or until the onions are softened.

3 Put the grilled peppers in a heatproof bowl, cover with cling film and leave until cool enough to handle, Meanwhile, cook the sausages according to the pack instructions.

4 Break open the peppers. Discard the stalks, seeds and skin. and cut the flesh into thick strips. Add the garlic to the softened onions. then increase the heat slightly and cook, uncovered. until the onions are golden brown. Add the peppers, passata. spice mix or dried herbs. chickpeas and 4 tbsp water. Simmer for 5 minutes. then stir in the balsamic vinegar and chopped basil and season to taste.

5 Boil the mangetout for 1-2 minutes, then drain and season. Cut the sausages in half diagonally and stir into the stew. Scatter over the basil leaves and serve with the mangetout.
