SW recipe: Seafood paella

Ingredients (serves 4)

Low calorie cooking spray
1 onion, finely chopped
2 garlic cloves, finely chopped
A large pinch of saffron threads
¼ tsp turmeric
900ml chicken stock
1 tbsp smoked paprika
225g dried paella rice
500g mixed seafood – mussels, squid and prawns (you could use chicken if you want)
200g roasted red peppers in brine from a jar, drained and roughly chopped
200g asparagus tips, halved length ways

100g frozen or fresh peas
2 large carrots, peeled and finely cubed
200g runner beans, cut into small pieces
Salt and freshly ground black pepper
A handful of fresh flat-leaf parsley, finely chopped
Lemon wedges, to serve


☀️Place a paella pan or large frying pan sprayed with low calorie cooking spray over a medium-low heat and stir-fry the onion and garlic for 4-5 minutes, or until softened.
☀️Stir the saffron threads and turmeric into the chicken stock, then add the stock to the pan and stir in the smoked paprika. Bring to a simmer, then add the paella rice. Stir once, then cover and leave to simmer gently for 15-20 minutes.
☀️Add the seafood, roasted red peppers, asparagus, peas, carrots and runner beans. Cook for a further 10 minutes, stirring occasionally, until the rice is soft but not mushy, the vegetables are tender and the seafood is warmed through. Season well and stir in the parsley.
☀️Serve in shallow bowls with lemon wedges for squeezing over.
