SW recipe: Sichuan baked chicken


8 large bone-in chicken thighs, skinned
2 tsp Sichuan peppercorns, crushed (see tip)
Low-calorie cooking spray
3 pak choi heads, thickly sliced
225g can sliced water chestnuts, drained
3 tbsp oyster sauce


Preheat your oven to 200°C/fan 180°C/gas 6.
Spray the chicken thighs with low-calorie cooking spray and pop them in a non-stick roasting tin. Sprinkle with the Sichuan pepper and a little salt and roast for 30-35 minutes or until cooked through (the juices should run clear when poked with a skewer).
Shortly before the chicken is ready, cook the pak choi in a saucepan of boiling water over a high heat for 1-2 minutes or until just tender. Drain well and return to the pan. Reduce the heat to low, add the water chestnuts, oyster sauce and a splash of water and stir well. Cook for 1 minute more or until warmed through.
Divide the chicken and veg between plates and serve hot.
