Serves 4 Ready in about 1 hour 20 minutes
150g dried macaroni
Low-calorie cooking spray
1 yellow pepper, deseeded and diced
2 medium leeks, sliced
400g lean beef mince (5% fat or less)
1/2tsp cayenne pepper
1 tsp garlic powder
1 tsp mustard powder
2 tbsp tomato purée
2 tbsp Worcestershire sauce
8 large eggs, beaten
2 tomatoes, diced
Mixed-leaf and beetroot salad, to serve
1 Preheat your oven to 180°C/fan 160°C/gas 4. Cook the macaroni according to the pack instructions. Meanwhile, spray a large, ovenproof non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the pepper and cook for 3 minutes. Add the leeks and cook for a further 5 minutes, or until both are tender. Spoon onto a plate and set aside.
2 Add the mince to the pan and cook for 2-3 minutes, breaking it up with a wooden spoon as it browns. Add the cayenne pepper, garlic and mustard powder, and cook for a further 2.3 minutes. Stir in the tomato purée and Worcestershire sauce and season, then turn off the heat.
3 Drain the macaroni, then stir it into the beef mixture along with the pepper and leeks. Lightly level the surface with a fork.
4 Season the eggs, then pour them over the macaroni mixture. Scatter over the tomatoes and bake in the oven for 35-40 minutes, or until the eggs have set and the frittata is puffed up and golden brown. Slice into wedges and serve with the salad.
