SW recipe: Smoked haddock soufflé omelettes

1kg floury potatoes, such as Maris Piper or King Edward, peeled and cut into chips

Low-calorie cooking spray

4 skinless and boneless smoked haddock fillets (about 100g each)

8 large eggs

4 tsp mustard powder

20g fresh Parmesan, finely grated

Fresh chives, finely chopped, to serve

400g boiled thin-stemmed broccoli, to serve


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the chips on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Cook for 40 minutes, or until golden, turning halfway.

2 Meanwhile, put the haddock in a large, lidded pan in a single layer. Pour in enough cold water to just cover and put the lid on. Place over a high heat. Once simmering, turn off the heat and leave to stand for 3-5 minutes, or until the haddock is cooked through. Remove with a slotted spoon and set aside. Separate the eggs, adding the yolks to a large mixing bowl and the whites to another. Mix the mustard powder into the yolks, then flake in the haddock and stir. Use an electric whisk to beat the whites into stiff peaks. Mix 1 tbsp egg whites into the yolk mixture, then fold in the remainder.

3 Move the chips to the bottom of the oven, cover with foil to keep warm and heat your grill to high (if you have a separate grill, turn the oven to low). Place an 18cm, non-stick frying pan over a medium-high heat. Once hot, pour in a quarter of the soufflé mixture and cook for 3 minutes. Top with a quarter of the Parmesan. Grill for 3 minutes until puffed and golden. Transfer to a plate, cover with foil and keep warm with the chips. Repeat to make 4 omelettes. Scatter the soufflé omelettes with chives, and serve 1 per person with the chips and broccoli.
