INGREDIENTS:

500g dried spaghetti
Grated zest and juice of
1 large unwaxed lemon
300g smoked salmon, sliced
1 large red chilli, deseeded
and chopped
Small bag of rocket leaves

Method:

COOK the pasta according to the pack instructions.
Meanwhile, mix the lemon juice, salmon, chilli and rocket in a bowl.
Drain the pasta and return to the saucepan. Toss through the smoked salmon mixture, divide between shallow bowls and scatter with lemon zest to serve.
