SW recipe: Smoked Salmon and Chive Omelette

Ingredients

  • 3 large eggs
  • Low-calorie cooking spray
  • 3 tbsp unflavoured quark or fat-free natural fromage frais
  • 50g smoked salmon, cut into thin strips
  • Pinch of dried dill
  • 1 tbsp chopped fresh chives

Method:

  • Whisk 2 of the egg whites to a foam. Whip the whole egg with the 2 egg yolks and 1tbsp water. Fold in the whites.
  • With cooking spray, Cook until golden on the bottom and just cooked on top.
  • Spoon the quark to one side, top with smoked salmon. Fold the omelette over and slide it on to a warm plate. Sprinkle with chives.
