Low-calorie cooking spray
6 frozen Slimming World Pork Sausages defrosted
1 large onion, finely chopped
2 large carrots, finely diced
1½ tsp smoked paprika
2 tsp dried oregano
400g can chopped tomatoes
415g can baked beans (to make this recipe SP, swap the baked beans for a 400g can of cannellini beans)
2 heads of spring greens, shredded
Spray a large, deep, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the sausages and cook for 1-2 minutes on each side until browned, then set aside. Add the onion and carrots to the pan, and stir-fry for 5 minutes until starting to soften.
Add the paprika, oregano and tomatoes with 400ml water. Stir to combine, then top with the sausages. Bring to the boil, then cover and simmer rapidly for 10 minutes. Uncover and stir in the baked beans.
Bring back to a simmer and warm through for 5 minutes. Meanwhile, boil the spring greens for 2 minutes, then drain and stir through the stew. Season and divide between 4 plates or bowls to serve.
Add in peas, sweetcorn or butternut squash chunks for extra filling power.
