For the stew:
750g lean pork leg, visible fat removed, diced
4 celery sticks, finely chopped
1 large onion, finely sliced
3 garlic cloves, crushed
4 medium carrots, finely chopped
2 green peppers, deseeded and diced
6 smoked back bacon rashers, visible fat removed, sliced into strips
2 tsp hot or sweet smoked paprika
2 x 400g cans chopped tomatoes
1 litre chicken stock
400g can cannellini beans, drained and rinsed
For the wedges:
1kg sweet potatoes, cut into wedges
Low-calorie cooking spray
For the garlic yogurt:
200g fat-free natural Greek-style yogurt
1 garlic clove, crushed
25g fresh chives, chopped, reserving some to serve
1 Put all the stew ingredients, except the beans, in a large, lidded saucepan or flameproof casserole dish. Season, bring to a simmer, then cover and cook for 1 hour, stirring occasionally. Stir through the beans, then cook uncovered for a further 40-50 minutes, or until the pork is tender and the sauce is thick (if the stew starts to get too thick, add a splash of water).
2 Meanwhile, to make the wedges, preheat your oven to 200°C/fan 180°C/gas 6. Spread the wedges on a large, non-stick baking tray in single layer. Spray with low-calorie cooking spray, season with salt and bake for 35-40 minutes, or until golden, turning halfway.
3 Mix together the yogurt, garlic and chives, and season to taste. Ladle the stew into 4 bowls or large serving mugs, then top with the garlic yogurt and add a twist of black pepper. Scatter over the reserved chives and serve with the wedges.
