SW recipe: Smoky sausage stew


Serves 4, plus a freezer dish for 4

16 frozen Slimming World Syn-free Pork Sausages

Low-calorie cooking spray

8 smoked bacon medallions, visible fat removed, diced

2 onions, diced

2 red onions, diced

3 celery sticks, diced

3 large carrots, peeled and diced

1 tbsp each sweet smoked paprika, mustard powder and mild chilli powder

2 tbsp red or white wine vinegar

4 bay leaves

2 vegetable stock cubes, crumbled

2 x 400g cans chopped tomatoes 680g jar passata

1.2kg canned brown or green lentils, drained and rinsed


1 Cook the sausages according to the pack instructions. Set aside to cool, then slice in half widthways.

2 Meanwhile, spray a large casserole dish with low-calorie cooking spray and place over a medium-low heat. Gently fry the bacon, onions, celery and carrots for 10-15 minutes until softened and golden, adding splashes of water if the veg starts to stick.

3 Add the spices, stir for 2 minutes, then add the vinegar, bay leaves, stock cubes, tomatoes and passata. Fill each tomato can with water and add to the stew. Stir, bring to a simmer and cook for 20 minutes, or until the sauce has thickened.

4 Season to taste, then stir through the lentils. Ladle half the stew into 4 freezable containers or food bags, leave to cool for freezing, then add 4 sausage halves to each. Add the remaining sausages to the casserole dish and simmer for 10 minutes to heat through. Discard the bay leaves, then spoon into bowls to serve.
