SW recipe: Smoky Spanish meatballs with patatas bravas

INGREDIENTS:

1.5kg floury potatoes, peeled and cut into small chunks

Low-calorie cooking spray

500g passata

1/2tsp dried chilli flakes

1 tbsp smoked paprika

1 tsp Tabasco sauce

2tbsp red wine vinegar

4 garlic cloves, crushed

3 back bacon rashers, all visible fat removed

750g lean pork mince (5% fat or less)

Finely grated zest of 1 small unwaxed lemon, plus wedges to serve

2tbsp chopped fresh parsley, plus extra to serve Vegetables, to serve

Method:

• Preheat the oven to 220°C/200°C fan/gas 7. Cook the potatoes in a saucepan of boiling water over a high heat for 5-6 mins or until almost tender. Drain well. Line the base of a roasting tin with non-stick baking paper and spray with low-calorie cooking spray. Arrange the potatoes in the tin so that they aren’t touching and spray each one with more low-calorie cooking spray. Roast for 45 mins or until golden, turning once.

• Meanwhile, put the passata, chilli, lisp smoked paprika, Tabasco, vinegar and half the garlic into a medium saucepan over a low heat. Part-cover and simmer for 20 mins or until reduced and thickened. Season to taste, cover and keep hot. Once the tomato sauce is simmering, put the bacon in a food processor and process until finely chopped. Transfer to a mixing bowl, add the pork, lemon zest, parsley, remaining garlic and smoked paprika, 3/4tsp salt and some black pepper and mix well. Shape into 28 walnut-sized meatballs using slightly wet hands.

• Spray a large, ovenproof non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the meatballs and fry for 5 mins or until nicely browned all over, then transfer the pan to the oven and roast for 5 mins or until cooked through. Remove the potatoes from the oven, toss with the tomato sauce and divide between plates along with the meatballs. Sprinkle over a little extra parsley and serve hot with lemon wedges and vegetables.
