SW recipe: Spanakopita (spinach and feta pie)

serves 4

1/2 Syns per serving ready in 1 hour

Ingredients:

1kg frozen spinach

bunch of finely chopped spring onions

small handful of finely chopped fresh parsley small handful of finely chopped fresh dill

100g reduced fat feta cheese crumbled

250g low fat natural cottage cheese,

2 crushed garlic cloves

a little grated nutmeg

salt and pepper

3 eggs beaten

calorie cooking spray

2 x 45g ready-rolled filo pastry sheets, halved

Method:

Preheat the oven to 180°C/Fan 160C/Gas 4.

Cook the spinach according to the packet instructions then tip into a colander. Press out the excess liquid and squeeze dry with kitchen paper or a clean tea towel. Roughly chop and set aside to cool in a large bowl.

Add the spring onions to the spinach along with the parsley, dal, feta, cottage cheese, garlic and nutmeg. Season to taste and mix to combine then pow in the eggs and mix again. Spray a 30 x 20cm ovenproof dish with low Calorie cooking spray and spoon in the spinach mixture.

spray the filo sheets with low calorie cooking spray and scrunch-them over the top of the spinach mixture to cover. Bake for 30-35 minutes or until golden and serve warm with your favourite potatoes and salad.
