SW recipe: Spanish sausage and bean stew

Ingredients

12 frozen low fat vegetarian sausages
Low calorie cooking spray
2 onions, thinly sliced
2 garlic cloves, crushed
3 peppers, deseeded and thinly sliced (a mix of colours looks great)
2 tsp sweet smoked paprika
400g can chopped tomatoes
4 tbsp tomato purée
400ml boiling vegetable stock
400g can butter beans, drained
400g can cannellini beans, drained
100g red baby plum tomatoes or cherry tomatoes
100g yellow baby plum tomatoes or cherry tomatoes
Salt and freshly ground black pepper
1 tbsp finely chopped fresh parsley, to garnish

Method

1. Cook the sausages according to the packet instructions, then slice thickly and set aside.

2. Meanwhile, spray a large non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the onions and garlic and stir-fry for 4-5 minutes or until soft. Add the peppers and stir-fry for 3-4 minutes.

3. Stir in the paprika and cook for a few more minutes before adding the canned tomatoes, tomato purée, stock, beans and plum or cherry tomatoes. Season to taste, cover and simmer for 5 minutes, then add the sausages and cook for another 5 minutes.

4. Scatter over the parsley and serve hot.
