Serves 4 Ready in about 20 minutes
Low-calorie cooking spray
400g lean beef mince (5% fat or less)
1 beef stock cube, crumbled
2 tsp dried oregano 1 onion, diced
2 celery sticks, diced
2 large carrots, peeled and diced
100g smoked bacon medallions, visible fat removed
350g dried spaghetti
1/2 small pack fresh basil, leaves picked, reserving some to serve
250g cherry tomatoes, halved
1 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a high heat. Fry the mince with the stock cube and dried oregano for 10 minutes, then stir in the cherry tomatoes.
2 Meanwhile, bring a large saucepan of water to the boil. When the mince has been frying for 5 minutes. add the onion, celery, carrots. bacon and spaghetti to the saucepan of water and simmer for 10 minutes. or until the spaghetti is cooked. Just before the spaghetti is done, add the basil leaves.
3 Finely chop a few of the reserved basil leaves. Drain the spaghetti mixture, then tip everything back into the saucepan along with the mince. Season and toss together. Scatter over the reserved chopped and whole basil leaves, and serve.
