SW recipe: Spiced rice pudding with apple, lemon, and mint

Ready in 40 minutes


650ml skimmed milk
2 level tbsp sweetener granules
100g dried pudding rice
¼ tsp ground cinnamon
¼ tsp freshly grated nutmeg
1 red dessert apple
Zest and juice of ½ unwaxed lemon
Roughly chopped fresh mint leaves, to decorate


1 Put the milk, sweetener, rice, cinnamon and nutmeg in a non-stick saucepan. Bring to the boil over a medium-high heat, stirring continuously. Reduce the heat to low and simmer for 25-30 minutes, stirring occasionally, then continuously towards the end Spiced rice pudding with apple, lemon & mint Take your taste buds back to school with this grown-up take on a childhood favourite of the cooking time – until the rice is tender and the mixture has thickened.

2 Meanwhile, quarter the apple and discard the core. Cut into small cubes, then mix with the lemon zest and juice.
