- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp sweet smoked paprika
- 1 tsp cayenne pepper
- 4 lean sirloin, fillet or rump steaks, visible fat removed
- Finely chopped fresh basil plus a few whole leaves, to garnish
- For the ratatouille:
- Low calorie cooking spray
- 3 shallots, finely chopped
- 2 garlic cloves, finely chopped
- 3 large courgettes, cubed
- 6 baby aubergines, diced (or use 1 large aubergine)
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp red wine vinegar
- A pinch of sweetener
- 400g can chopped tomatoes
- 2 tbsp tomato puree
- Salt and freshly ground black pepper
1 First make the ratatouille. Spray a large non-stick saucepan with low-calorie cooking spray and stir fry the shallots and garlic over a medium heat for 3-4 mini Stir in the courgettes, aubergines, thyme and oregano, and cook gently for 5 mini Add the vinegar, sweetener, tomatoes and puree. Season with salt to taste, cover and simmer for 15 mins or until the vegetables have softened, stirring occasionally.
2 Meanwhile, put the coriander, cumin, paprika and cayenne pepper in a bowl, add a pinch of salt and mix well. Season each steak on both sides with the spice mixture and spray both sides with low-calorie cooking spray. Place a heavy-based non-stick griddle or frying pan over a high heat and cook the steaks for 2 to 4 mins each side (4 mins for well done). Cover and set aside to rest. Put the steaks on warm plates with the ratatouille and scatter over the basil to serve.
