Serves 4 (as a starter, or part of a tapas selection)

For the meatballs:
400g lean beef mince (5% fat or less)
1 egg yolk
2 garlic cloves, crushed
1 red chilli, finely chopped
1 tsp ground cumin
1½ tsp smoked paprika
For the sauce:
Low-calorie cooking spray
1 onion, finely chopped
2 garlic cloves, crushed
½ tsp dried red chilli flakes
1 tsp smoked paprika
2 tsp balsamic vinegar
2 x 400g cans chopped tomatoes
1 Put all the meatball ingredients into a large bowl, season, then knead together using your hands. Divide into 4, then divide each portion into 4 again to make 16 equal portions. Roll into balls, then put onto a large plate, cover and chill until needed.
2 Spray a wide, lidded, non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 6-8 minutes, stirring frequently. Add the garlic, chilli flakes and paprika with a splash of water. Cook for 1 minute, then add the vinegar and tomatoes. Season and gently simmer for 20 minutes, adding a splash of water if it looks too thick.
3 Add the meatballs, spacing them evenly around the pan. Cover and simmer very gently for 8-10 minutes, or until the meatballs are cooked through, then serve.
