SW recipe: Spicy sausage tomato and chickpea bake

Serves: 4 Ready in about: 55 minutes Syns per serving: 1

INGREDIENTS:

Low-calorie cooking spray

2 red onion, finely sliced

2 leeks, finely sliced

4 carrots, finely sliced

2 garlic cloves, crushed

2 x 400g cans chopped tomatoes with chilli

1 tbsp Worcestershire sauce

400g can chickpeas, drained and rinsed

360g pack frozen 6 Slimming World Pork sausages

20g fresh Parmesan

400g spring greens, shredded

METHOD:

1/ Preheat your oven to 220C/Fan 200C/Gas 7. Spray a large, deep, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onions, leeks and carrots, and fry gently for 8-10 minutes, stirring frequently. Stir in the garlic and fry for 1 minute until fragrant. Pour in the chopped tomatoes, then fill 1 can with water and add to the pan. Stir everything together, season and simmer for 10 minutes.

2/ Transfer to an ovenproof dish. Add the Worcestershire sauce and chickpeas, then sit the sausages on top. Evenly grate over the cheese and bake for 35 minutes until golden brown and bubbling, and the sausages are cooked through. Meanwhile, boil the spring greens for 1-2 minutes, then drain. Cut the sausages into chunks and divide with the baked between 4 plates. Serve with the spring greens .
