Low-calorie cooking spray
1 onion, finely chopped
4 celery sticks, finely chopped
250g chestnut mushrooms, finely sliced
2 garlic cloves, crushed
2 sprigs of fresh thyme, leaves picked
250g dried orzo pasta
1 litre vegan vegetable stock
1 red pepper, deseeded and sliced
15g fresh basil, leaves roughly chopped
Zest and juice of 1 unwaxed lemon
1 tbsp cider vinegar
1 Spray a large, deep, non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the onion, celery and mushrooms, and fry gently for 10 minutes until softened, stirring often.
2 Stir in the garlic, thyme, orzo and stock. Bring to the boil, then reduce to a simmer and cook for 20 minutes, stirring often, until the orzo is just tender. Meanwhile, mix together the red pepper and half the spinach to make a salad.
3 Stir the remaining spinach, half the basil, the lemon juice and cider vinegar into the orzo mixture. Let the spinach wilt, then season to taste. Top the orzo with the remaining basil and the lemon zest, then spoon into bowls and serve with the salad.
