SW recipe: Spinach, aubergine and chickpea curry with rice



600g baby spinach

1 tsp olive oil

2 onions, finely chopped

1 aubergine, cut into 1.5cm cubes

400g can chickpeas, drained

2 garlic cloves, finely chopped

1 red chilli, deseeded and finely chopped, plus extra to garnish

1 tbsp each ground cumin and coriander

1 tsp fennel seeds

2 tsp mild curry powder

400g can chopped tomatoes

200g passata with onions and garlic

Salt and freshly ground black pepper

350g dried basmati rice, to serve

A small handful of fresh coriander, roughly chopped, to garnish

Lime wedges, to serve


1 Steam the spinach, drain and rinse under cold running water. Squeeze gently to remove most of the liquid, then pulse in a food processor to make a fairly coarse puree.

2 Add 1 tsp olive oil to a large frying pan and place over a medium heat. Add the onions. aubergine. chickpeas. garlic, Chilli and all the spices and stir-fry for 4-5 minutes

3 Add the tomatoes and passata. and season well. Cover the pan, reduce the heat to medium-low and simmer for 15-20 minutes. or until the aubergine is tender.

4 Meanwhile. cook the basmati rice according to the packet instructions. Stir the spinach into the curry and warm through

Garnish with coriander and serve with rice. chilli and lime wedges.
