SW recipe: Squash and broccoli bake

Serves 4
Ready in 1 hour


Low-calorie cooking spray
1 small butternut squash, peeled, halved, deseeded and sliced
½ -1 tsp dried chilli flakes
400g long-stem broccoli
6 medium eggs
250ml skimmed milk


Preheat your oven to 200°C/fan 180°C/gas 6. Put the squash slices in a medium-sized roasting tin (about 30cm x 23cm), spray with a little low-calorie cooking spray and sprinkle with half of the chilli flakes. Season lightly, toss well and roast for 30 minutes or until tender.

When the squash is nearly done, blanch the broccoli in a saucepan of boiling water over a high heat for 2 minutes then drain well, shaking off as much excess water as possible. Add the broccoli to the cooked squash in the roasting tin and toss well.

Whisk together the eggs and milk, season lightly and pour into the roasting tin, tilting the tin so that the egg mixture gets into all the nooks and crannies. Sprinkle over the rest of the chilli flakes and bake for 20 minutes or until set and golden.

Serve hot.
