1kg sweet potatoes, cut into wedges

Low-calorie cooking spray

150g fat-free natural Greek-style yogurt

Juice of 1 lime, plus wedges to serve

50g fresh coriander, leaves picked and stalks set aside

1 small garlic clove, crushed

2 red onions, thinly sliced

2 peppers, deseeded and thinly sliced

4 lean sirloin or rump steaks, visible fat removed, sliced into 1-2cm-thick strips

1 tbsp dried Bart Blends Fajita spice mix or Schwartz Fajita Seasoning (you can reduce to 2 tsp if you prefer a milder flavour)

1 tbsp cumin seeds

Little gem, cos or romaine lettuce leaves

250g cherry tomatoes, quartered, to serve


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the wedges on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and cook for 35-45 minutes, or until golden and crisp around the edges, turning halfway.

2 Meanwhile, to make the coriander sauce, put the yogurt, half the lime juice, the coriander stalks and garlic into a food processor. Blitz until smooth, then season and set aside in a small bowl.

3 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onions and peppers, and stir-fry for 2-3 minutes until softened and beginning to char. Add the steak strips and stir-fry for a further 2 minutes until the meat is coloured. Stir through the spices with a large splash of water, then reduce the heat to medium and stir-fry everything for a further minute. Add the remaining lime juice and the coriander leaves.

4 Spread the lettuce leaves out on a serving platter and divide the steak mixture between them. Top with the coriander sauce and tomatoes. Serve with the sweet potato wedges and lime wedges for squeezing over.
