Serves 4 Ready in about 50 minutes
6 large sweet potatoes
2 red peppers, deseeded and cut into bite-size chunks
1 red onion, cut into wedges
Low-calorie cooking spray
1 tbsp ground coriander
2 tbsp ground cumin
1 tsp sweet smoked paprika
2 garlic cloves, crushed
200g chestnut mushrooms, sliced
2 courgettes, cut into bite-size chunks
300g lean beef frying steaks, visible fat removed
Chopped fresh coriander leaves, to serve
1 Preheat your oven to 180°C/fan 160°C/gas 4. Put the sweet potatoes on a non-stick baking tray and bake for 45 minutes, or until soft, turning halfway. Line another baking tray with foil, put the peppers and onion on top, then add to the oven with the potatoes for the final 25 minutes of their cooking time, or until the vegetables are lightly charred.
2 -Meanwhile, spray a large, non-stick frying pan with low-calorie cooking Spray and place over a medium-low heat. Add the spices and fry for 1 minute until fragrant. then add the garlic and cook for a further minute. Add the mushrooms and courgettes and fry for 10 minutes, or until soft, adding a splash of water if the vegetables begin to stick.
3 Add the roasted peppers and onion to the frying pan with the spiced vegetables. Stir, season to taste and keep warm until needed.
4 Preheat a non-stick griddle or frying pan to smoking hot. Season the steaks and spray with low-calorie cooking spray. Cook for 1-2 minutes on each side, then leave to rest for 5 minutes before cutting into thin strips.
5 Halve the sweet potatoes, then scoop out most of the centre into a bowl (keep chilled for a Free Food Snack later in the week), leaving about lcm of flesh inside. Fill with the vegetables, then top with the steak and scatter over the coriander.
