SW recipe: Steak fajita salad

SIMPLE

Serves 4

Ready in about 20 minutes

Ingredients:

2 tsp chilli powder (hot or mild)

3 tsp cumin seeds

Salt and freshly ground black pepper

2 rump or sirloin steaks, all visible fat removed

Low-calorie cooking spray

2 onions, sliced

100g plum tomatoes, finely cubed

Juice of 2 limes

1 tbsp tomato puree

1 red and 1 yellow pepper, deseeded and cut into chunks

2 x 400g cans black beans, drained and rinsed

A small bag of watercress, spinach and rocket salad

Method:

1 Mix together the chilli powder, 2 tsp cumin seeds and the seasoning. Rub the steaks all over with the mixture, then cover and set aside for 10 minutes.

2 Meanwhile. spray a frying pan with low-calorie cooking spray and place over a high heat. Fry the onions for a few minutes until charring but still a little crunchy. then tip onto a plate to cool.

3 Place a griddle or frying pan over a high heat and cook the steaks for 2 minutes each side for rare. 3 minutes each side for medium or 4 minutes each side for well done. Transfer to a plate and leave to rest.

4 Meanwhile, make a salsa by mixing together the tomatoes, lime juice, tomato puree and remaining cumin seeds, and season.

5 Mix together the peppers, black beans and salad leaves, then pile onto a platter. Thinly slice the steaks and scatter over the salad. Divide between 4 plates and serve with the salsa on the side.
